Last summer, I travelled among the Greek islands - my advice would be to choose Paros over Santorini and Mykonos, if you intend to visit just one island. Paros offers everything at the same level/quality as the two I mentioned (it's beautiful), but it's much calmer (the others were unpleasantly crowded), less pretentious and much more affordable, simply because it's not as popular. I'm not saying I didn't enjoy my stays on the other two islands, I did, but I definitely won't come back there...
