I spent a lot of time in Croatia last summer. I loved every bit of it, but my absolute, hands down favorite part of Croatia was the island of Korčula. I took a ferry from Dubrovnik. It's a walled city, not quite as busy, with amazing food and wine, and all-around stunning. I’ll be heading straight there on my next visit.
