Absolutely loved my experience in Pokhara, Nepal. I stayed there for a week but I'm dying to go back. 
There's just so much to explore, the city is stunning and the people are really nice. I stayed in a hostel called Forest Lake in the Lakeside area and I can't recommend it enough!!
Went paragliding, hired a little canoe to get to the temple in the middle of the lake... To move around, I recommend using the app Pathao (it's like the local Uber) to get rides on motorbikes.
